Popular market Gasztroplacc is branching out to create a chain of stores stocking healthy items by small-batch Hungarian producers. Now two new outlets have opened in Óbuda and Újbuda, to complement previously established stablemates in District IX and Újlipótváros.
Launched in 2014, Pancs Gasztroplacc on Tűzoltó utca is much more than a Sunday market for healthy, small-batch produce. A friendly community with a passion for gastronomy has developed, along with a loyal customer base.
The initial idea of the market has now grown, and Pancs is a major advocacy for small-scale produce and sustainability. The fact that Balázs Vajas and team are starting to operate a franchise system underlines this role, which is why it was important for both new outlets to be run by professionals who think along similar lines as the smallholders and their customers.
Cecília Parcsetich and Csaba Czigler in Újbuda, and Szilveszter Kovács and Boróka Balogh in Óbuda aim to engender the same loyal group of customers around their stores as also seen at other Pancs enterprises. The result should be a more predictable and secure supply chain and even better products.
For Pancs, the franchise system is a more secure framework than strict marketing and business acumen, but the goal is to ensure that the product range at each store is at least 80% the same, taking into account the special needs of local customers.
Currently they work with around 50 producers who supply tasty goods such as pastes by Mislenyi Ízműhely, vegan produce by Zsuvega Konyhája, fine mustards by Tibor Bodor, Kalapos herbal cordials and DÉR Juice drinks. For a quick breakfast, there’s fresh baked goods and coffee.
There is no compromise on packaging here either, as they strive for
sustainability. You can have seeds, dried legumes, pasta, muesli and oils
weighed, and if you’ve left your own bag or jar at home, you can buy a new one
on the spot, to be used again later.
Small-batch cordials, dairy products and spreads
also come in durable, environmentally friendly packaging that can be reused
later.
The company is open to bringing in new franchise partners, so the Pancs range may soon reach as many domestic locations as possible.
