A prominent event of Hungarian gastro culture,
Gourmet Festival
will take place at its usual venue of Millenáris during the Pentecost weekend, that is on 21-24 May. A new feature of this year’s festival is that it will open its gates as early as Thrusday, with
chicken paprikash
, the dish of the year being presented in different variations by some of Hungary’s most outstanding restaurants. Along with the best eateries, the event will be attended by the most excellent wineries, confectioneries and other prime representatives of the Hungarian gastro world from Budapest and the countryside as well.
Two years ago it was goulash, last year it was potato casserole, and this year it’s time for chicken paprikash to be the centre of attention at Gourmet Festival, taking place over the Pentecost weekend.
“Take two or more whole chickens and cut them into medium sized pieces. Sweat a knob of butter or fat in a brass pan, then add paprika, allspice and red onion and cook until yellow. Throw in the pieces of chicken…”
– acclaimed cookery writer
István Czifray
wrote about the preparation of Hungary’s emblematic poultry dish.

At this year’s Gourmet Festival it will be revealed how the best chefs in the country make this populat favourite fresh again. Apart from the restaurant exhibitors and the Hungarian chefs,
star chefs from abroad
will also take charge of the gastro stage where guests can join in non-stop food and drink tastings. In the festival’s street food category grilled and barbecue dishes will be added as new culinary treats, and visitors will find out why BBQ, that is slow cooking over smoke, which is not to be confused with grilling, is one of the finest food preparation philosophies.

This year, Hungary’s Bocuse d’Or Academy, the Hungarian epicentre of the world’s most prestigious chef championships, will set up a separate booth where anyone can sample the five-course menus put together by the Hungarian restaurants achieving massive success at the January
Bocuse d’Or
event in Lyon. Naturally, the best countryside restaurants will also get a chance to present their dishes and the most exciting rural flavours, while Michelin star-winning eateries will entice gastro enthusiasts among the exhibitors as well as on stage.
