It is not a new idea to stuff all kinds of good ingredients into rolls, or between two slices of bread, but here in Budapest we certainly haven’t seen anyone fill classic French baguettes with mouthwatering meats before – until now. As the newest street-food spot of Kolosy Square, Crust make scrumptiously stuffed sandwiches accompanied by a tempting variety of savory soups.

Kolosy Square’s freshly opened Crust eatery entices everyone with savory baguette sandwiches and flavorful soups. The owner, Attila Fekete, leads this tiny and cozy hotspot together with his wife, welcoming guests with their eye-catching motto written on the wall: “In Crust we trust”.[TempImageCode:7VtFudky5992cbea24fc7/248062]I’ve always been planning on joining the hospitality field, and after a long period of thinking, I made up my mind and chose baguettes. I wanted to open a place with lots of regulars who I can chat to, like IT guys from the nearby offices, as I come from the same scene, said the owner. I learned about filled baguette-like sandwiches for the first time during a trip to Iran, where the baguettes were filled with roasted or boiled meats, and pickles – this is where I took the idea from. There are no similar sandwiches in Budapest, and not really even around the world; I know that in Vietnam they stuff baguettes with liver paté , meat, and roasted onions, while in South Korea the filling is made of ratatouille, Attila continues, introducing us to the global history of this tasty meal.[TempImageCode:FR7hi68F5992cbea258ce/248063]We’ve tasted baguette sandwiches before that were filled with so many layers of stuffing that they either fell apart entirely, or simply didn’t fit between our lips at all. Well, at Crust they try to avoid these problems by carving out the inside of the baguettes, making enough space for the tasty filling, and then properly toasting the crust – this is where the name comes from. When we bite into the sandwich, it’s not steeped in sauce, as the crunchy crust doesn’t soak through, but we still feel the tasty flavors of the fillings.[TempImageCode:NJLjLj2A5992cbea25e5c/248064]Considering the selection, at the moment the chicken sandwich is the most popular. In the 22-cm-long carved-out baguette, we find shredded chicken marinated in white wine and butter with capers (990 HUF). The shredded pork marinated in beer, cucumber, and coriander combo is 220 forints more expensive, while vegetarians can try a baguette filled with courgette ratatouille, thyme, and basil for 1,290 forints.[TempImageCode:VceAGm7Z5992cbea26372/248065]Besides the scrumptious baguettes, Crust also offers different kinds of soups, even rarities that are not so easy to find around Budapest, like cabbage soup. Sweet-toothed patrons are treated with cold plum cream soup enhanced with roasted almonds, while those who like spicy soups will definitely enjoy a ratatouille cream soup with sausage chips. Furthermore, a sightly sour Ciorbă soup is also featured on the handwritten menu hanging on the wall.
