Az élet étterme (meaning Restaurant of Life) offers no-bake, no-cook, and even no-steam versions of widely-known and fan-favourite dishes. The popularity of this odd diet gave life to the second raw vegan restaurant in Budapest, this time on the Buda side.

Raw realityAz élet étterme -, the first raw vegan restaurant not just in Budapest, but in Central Europe, - opened its second venue in Buda, in Kiss János altábornagy utca. The focus is on healthy meals, and each dish is prepared from raw ingredients that did not undergo baking, cooking or steaming. It's natural if the first things that pop into your mind are sprouts, vegetables and seeds, even though the menu is much more varied than that. We can choose from pancakes, stuffed cabbage, kőrözött, rissole, or flaxseed.

You are what you eatThis quote is in perfect harmony with the idea behind Élet Étterme, where the basic ingredients are fresh vegetables, fruits, and seeds. Pancakes are made of dried fruits, pasta from courgette, curd cheese from sunflower seed sprouts, and the hamburger base consists of kale. Desserts are based on similar ingredients, and even an experienced confectioner couldn't tell that they lack eggs and milk. Nothing tastes like paper or sand, so leave your preconceptions at home: all dishes have a typical Hungarian flavor and can satisfy even an avid meat-eater.

Portions might seem tiny at first, but will fill you up just right. An average meal costs about 1200 HUF, a salad is 600 HUF, the flaxseed bread is 600 HUF per 10 dkg, and the price of a drink (poppy seed milk, sesame milk, almond and coconut milk) is 500 HUF.

Go rawA raw vegan diet differs from other vegan philosophies in that it isn't based on just ethics, but health aspects, too. The owner of the restaurant, Ákos Takács, says that our digestive systems can break down and use 100% of these foods since they are easily absorbed and energizing.

He met raw vegan foods after an accident in which a truck pulled over his leg. He started this special diet in hope of a quick recovery. According to him, his wounds healed faster, and he felt better within a short amount of time. Then he bought a blender, set up a business with home delivery, and then opened his first restaurant in Garibaldi Street.

He recommends this unique diet to everyone, to those with celiac disease or cancer to those with bad blood pressure or weight problems. This diet is said to be beneficiary for everyone, although there is no proof yet. To top it all off, we firmly believe that even if you prefer meat, you should give Élet Étterme a try, and if you’re open-minded, taking part in one of the restaurant’s courses is also worth it.
