Some restaurants make an impression because of a single standout dish. Others stay with you because of how they make you feel from the moment you walk in. Marumba belongs firmly to the latter.

Tucked away in the heart of downtown Budapest, it's the kind of place that effortlessly adapts to the occasion. Stop by for a leisurely brunch, meet friends over dinner, gather the family around one of the large tables or settle in for a date that stretches well into the evening. Since autumn 2025, Marumba has embraced a completely meat-free, vegetable-led concept, giving classic Hungarian dishes a fresh perspective.

A space that immediately makes you want to stay

Marumba manages to feel lively and calm at the same time. It's the kind of place where the first thing you'll notice isn't just the menu - it's the atmosphere. Vintage furniture sits alongside colourful contemporary artwork, warm lighting softens the lofty interior, and plants spill across shelves and window ledges, making the whole restaurant feel wonderfully lived in rather than carefully staged.

Whether you're catching up with friends over brunch, planning a family dinner or looking for somewhere to linger over a date, it's exactly the sort of place where one course somehow turns into coffee, dessert and another hour of conversation.

Hungarian comfort food, seen differently

Rather than trying to imitate meat, Marumba lets vegetables take centre stage. The daytime menu combines lighter brunch favourites - egg dishes, generous toast creations and seasonal breakfasts - with more substantial plates inspired by traditional Hungarian cooking. Everything is prepared using seasonal ingredients sourced from Hungarian producers, and many dishes can also be adapted for gluten-free, lactose-free or vegan diets. The philosophy is refreshingly straightforward: showcase just how versatile vegetables can be.

Vegetables take centre stage

One of the things we appreciated most about Marumba is that every plate feels carefully considered. Rather than trying to imitate meat, the kitchen lets seasonal vegetables take centre stage, pairing them with bold flavours and thoughtful combinations that prove just how exciting plant-focused cooking can be. We started with the Treasures of the Garden (HUF 2,300), a colourful plate of seasonal vegetables dressed simply with apple cider vinegar, olive oil and Maldon salt. Fresh, crisp and beautifully presented, it's the kind of dish that celebrates the quality of local produce without overcomplicating it. Our favourite of the evening, however, was undoubtedly the Zucchini Dolma (HUF 4,350). Filled with Hungarian rice, beans and walnuts, then served with a silky fermented kohlrabi velouté, dill and ginger cucumber salad and crispy onion crumbs, it struck a wonderful balance between comforting and light. Every bite brought a new texture, making it one of those dishes you'll find yourself thinking about long after you've left. No visit would feel complete without trying Marumba's take on rakott krumpli (HUF 4,200). One of Hungary's most beloved comfort foods, it's been reimagined with smoky harissa grain sausage cream, parmesan potatoes, labneh and a perfectly soft-boiled egg. Familiar enough to feel nostalgic, yet different enough to surprise, it's a brilliant example of how the restaurant breathes new life into traditional Hungarian recipes without losing their soul. And if, like us, you always leave room for something sweet, you're in luck. Marumba's desserts are every bit as thoughtfully prepared as the savoury dishes, providing the perfect ending to a leisurely meal.

The drink you'll want all summer

Some drinks are simply refreshing. Others instantly become the reason you'll return. Marumba's signature Waterlemon (HUF 2,100) definitely falls into the second category.

Made with fresh watermelon, lemon balm tea, verjus, soda water and topped with a delicate lemon balm foam, it's wonderfully light, refreshing and not overly sweet. On a warm summer afternoon - or alongside dinner after a long day exploring the city – it's exactly the kind of drink you want in your hand. While the menu also features a carefully curated selection of wines, cocktails and homemade lemonades, the Waterlemon is the one we'd happily come back for time and time again.

A restaurant for every ocassion

What makes Marumba so appealing is how effortlessly everything comes together. It's simply a restaurant where thoughtful food, warm hospitality and an inviting atmosphere come together naturally. Right in the heart of the city, it's equally suited to a spontaneous weekday lunch, a relaxed weekend brunch or a long catch-up with friends that stretches well into the afternoon. If you're curious about how creative a vegetable-focused kitchen can be - or simply looking for one of Budapest's cosiest places to eat - Marumba is well worth discovering.
