With new-wave trends now putting a twist into tradition, it is not always easy to find those classic flavours you crave, even when it comes to something as simple as a pancake. This is why Budapest’s new Cukorka by Nyugati station has opened, offering Hungarian, American and French crêpes made according to traditional recipes from our grandmothers’ time.

A pleasantly tasty and thin batter, filled with classic flavours such as cocoa powder, Nutella or marmalade and rolled up nicely into a few bites of sweet delight. The essence of Hungarian pancakes lies in its simplicity, which is exactly what Viktor Balogh is trying to recreate at Cukorka. This new tiny eatery offers pancakes made according to traditional recipes. No alternative flours or superfood. At the moment, three variations (Hungarian, American and French crêpes) are available with five fillings: cocoa, Nutella, marmalade, cinnamon and sweet cottage-cheese, and they can all be topped with chocolate sauce or maple syrup.

Classic Italian coffee also goes down well with pancakes at Cukorka. According to Viktor, dark coffee is a better match for pancakes than light-roast versions. Prices are friendly. Not even the most sugar-crammed version costs more than 1,000 forints, while the most expensive coffee is flat white, which is still only 700 forints. Although there is only room for two or three people at any one time, the warmth and the sweet scents will surely entice you inside during the colder months. And soon, savoury flavours will feature, too.
