Time Out Market Budapest is adding another name to its already impressive gastro line-up. Fúzió by Textúra & Borkonyha, the new concept from Michelin-starred chef Ákos Sárközi, opens on 11 September, bringing creative Hungarian bistro dishes to the Market in a more casual format.

The new restaurant brings together two familiar names from Budapest's gastro scene: Michelin-starred Borkonyha and its more experimental sister restaurant, Textúra. Both are led by chef and co-owner Ákos Sárközi, together with co-owners Tamás Horváth and Zoltán Kalocsai.

Fúzió takes elements from both restaurants but leaves the formality of traditional restaurant dining behind. The idea is to introduce Sárközi's cooking to a wider audience through creative, Hungarian-inspired bistro dishes that fit naturally into Time Out Market's more relaxed setting.

The dishes worth looking out for

We had the chance to get an early taste of Fúzió ahead of the opening, and there were a few dishes we'd happily order again. The Thai soup was easily one of the highlights. Spicy, packed with seafood and full of flavour, this one gets a solid 10/10 from us. If hot and spicy seafood soups are your thing, definitely put it on your list.

Another favourite was the duck liver bonbon, while the juicy roast pork served in brioche with thyme sauce was one of the most comforting dishes of the tasting. Served in soft brioche, it has something of a burger feel to it, so if that's usually your kind of order, this one is well worth trying.

Hungarian flavours remain at the heart of the menu, but Sárközi gives them his own playful twist. The pork brioche, for example, takes inspiration from szalontüdő, a traditional Hungarian dish, while familiar ingredients such as Tokaji aszú, pear and duck liver also make their way onto the menu.

These three dishes have been created exclusively for the Time Out Market location: duck liver with Tokaji aszú, pear and stangli; juicy roast pork brioche with thyme sauce; and Peach Blossom “Rákóczi túrós”, a reinterpretation of the classic Hungarian dessert.

Borkonyha and Textúra, but in a more casual setting 

Borkonyha has held its Michelin star since 2014 and is known for combining contemporary Hungarian cooking with international influences, while Textúra, which opened in 2018, has always shown a somewhat more playful and experimental side of the team. Fúzió sits somewhere between these two worlds, while being designed specifically for the easy-going atmosphere of Time Out Market.

For Sárközi, that more accessible format is an important part of the new concept. Rather than creating another fine-dining restaurant, the chef wants Fúzió to show that high-quality cooking doesn't necessarily need all the formality that often comes with it. And the timing is fitting: Time Out Market Budapest celebrates its first birthday this September, with special programmes and offers also expected throughout the month.
