District VII, Budapest’s Jewish Quarter and nightlife hub in one, represents history and modernity. The diversity of buzzy Wesselényi utca is now further illustrated by the Seven Cocktail Bar, which opened in late July under the professional guidance of mixologist Richárd Kormos, known throughout Hungary.
Although the Seven Cocktail Bar is basically the showcase of the Seven Hills Distillery in Bodrogkisfalud, Tokaj, they don’t oversell it.
When distillery founder Dénes Mészáros-Komáromy first went up to the top of
Várhegy and looked around, he could count seven hills. That's where
the name comes from and, because they love the mysticism of numbers,
they consciously found a spot in District VII.
The signature cocktail selection also builds on the company name, because all seven original mixes can be associated with some some kind of hill, be it Fuji, Formula 1 (Grand Prix driver Damon) or hip hop (Cypress Hill). The theme can also be delivered by association, as in the case of the Heartbreaker cocktail, illustrated by ECG curves resembling mountains.
Liquid Munchies (Jamaican rum, mezcal, almond milk, cinnamon syrup, cherry CBD oil, HUF 3,400) was inspired by Latino rap band, Cypress Hill. A maximum of two is allowed per person because of the CBD oil.
The location then moves to Italy, and the Indigeno cocktail inspired by the Seven Hills of Rome (Tokaj gin, amaretto, caper cordial, dry red wine, olive mascarpone foam, HUF 3,400). Olives are rarely used with sweet ingredients, even though they go perfectly with the slightly sweet mascarpone mousse. It’s a very cool cocktail in which you can feel practically all the basic flavours at the same time.
And then there’s Fujisan (Japanese whiskey, sake soaked with algae and dates, red Vermouth, orange oil, smoked salt algae crust, HUF 3,600), inspired by the mystical mountain in Japan. Here the basic flavours are complemented by the umami taste, also highly valued in Japan – it’s worth tasting the drink by itself and then with the algae crust on the edge of the glass, the difference is amazing.
Rico is also a huge fan and dedicated promoter of classic cocktails, so more than 75 (!) complement the signature drinks.
At
Seven, they try to pass on the knowledge they have acquired over many
years to as many interested guests as possible. On the one hand, they
think about ingredient-focused cocktails, on the other, as part of
sustainable thinking, they keep in mind the use of local products.
The bar world is not snobbish and aloof, but open, friendly and
inclusive, and the Rico team at Seven are particularly good company.
