A brightly revamped nook on central Dohány utca should feature on the Budapest itinerary of any burger aficionado. Usually packed with diners around lunchtime, Vaslap is where the aroma of freshly fried beef patties mingles with smoky bacon, each an ingredient of the signature Vaslap burger that also contains cheddar cheese, chipotle sauce, onion chips and jalapeño pepper.
Run by former sportsman Barnabás Csipes, Vaslap is a true labour of love, a place where your lunch order can take 30 minutes to deliver, but it’s well worth the wait. Barni, as the founder is nicknamed, brings his own gastronomic experience to this venture focused on everyone’s favourite handheld treat, created from fine ingredients.
The beef patty comes from a steak shop, the buns from the popular Panificio chain of bakeries. The sauces, including the lime-coriander fusion, are blended to perfection on the spot.
The salmon burger comes with a nice slice of grilled fish, homemade remoulade, cucumber, iceberg lettuce and onion. On the menu there’s also schnitzel burger, where breaded meat works well with a sweeter version of the bun around it.
To go the whole nine yards, a few extra forints gets you French fries or salad on the side, and a drink to go with it.
