The Budapest Marriott Hotel launched a call for tenders on May 28th to fill one of the vacant spaces in their massive five-star hospitality palace on the waterfront, with the goal of establishing a cool new hangout on the Danube Promenade in downtown Pest that has minimal involvement with hotel operations. Marriott’s CANVAS concept lab expects submissions by people with experience in the food-and-beverage industry who have so far been unable to open their own place, giving them the opportunity to create a fresh establishment with individual personality. The CANVAS incubation model focuses on exceptional experiences and the minds behind them – the hotel will help the lucky candidate by providing a 110-square-meter space with financial support and the international hotel chain’s logistical expertise.
Applicants (individuals or
teams) have until June 17th
to complete and submit their detailed concept, including a business plan, a
menu, and design ideas, via the CANVAS site. The management of the

will choose five
submissions based on concept originality, business potential, and viability, and the five
finalists will then
be judged by a jury of local food-and-beverage specialists and the hotel’s top executive. The selected entrepreneurs must be available for a cook-off competition
on June
23rd or 24th, in front of hotel general manager Rick Enders, celebrity Hungarian foodies
Zsófia Mautner and András Jókuti, and the head chef of Bock Bistro, Lajos Bíró. During
these two days, the finalists will present their concept and cook one of the dishes of the restaurant that they envision. The jury will evaluate the concept and the food on the spot, and announce a winner on June
25th.
By creating the infrastructure of the restaurant, the BudapestMarriottHotel has already started
preparing for the opening of the restaurant – which includes space on the Danube Promenade overlooking the
Pesti Vigádo
for terrace seating –
so it can
take just
three
weeks for the winning concept to become a functioning
restaurant or bar. The hotel will spend 30,000 USD on setting up the infrastructure and the fully equipped kitchen, and the winner will decide how to spend
the remaining 10,000 USD on the design and creation of the restaurant. The spot will open in the middle of July, and the winner will be the restaurant manager as an employee of Budapest Marriott Hotel, receiving a share of the profit as well.
